
Bread dumplings with berries and rice protein
Method
Cut the bread into large cubes and pour warm soy milk over it, then let it soak for 10 minutes. Then mix the soaked bread with the date sweetness, rice protein, poppy seeds, vanilla sugar, baking powder and soy milk and knead into a homogeneous dough. Bring water to the boil in a large saucepan, form dumplings from the dough and add to the water. Let stand over low heat – not boiling – for about 15 minutes. Take out the finished dumplings and let them drain. If you like the dumplings crispy, you can gently fry them in a little margarine
For the fruit compote, mix frozen raspberries and frozen strawberries and briefly heat them in a saucepan. Let it cool down and pour it onto the dumplings. Heat the frozen blueberries, also place them on the dumplings and sprinkle with poppy seeds. Enjoy!
