Makes 8–10 small pancakes
- 130g spelt flour
- 2 tablespoons PURYA! Vegan Protein Drink (Vanilla-Strawberry, Red Banana-Baobab or Chocolate-Carob)
- 1 tablespoon PURYA! Super Sprouts – Sprouted Flaxseeds
- 1 tablespoon sweetener (e.g., agave syrup, maple syrup)
- 125 ml plant milk (rice, soy, oat, etc.)
- ½ teaspoons baking powder
- pinch salt
Add 2 tablespoons hot water to the sprouted flaxseeds, mix well and set aside. Combine the spelt flour, PURYA! Vegan Protein Drink, baking powder and salt. Add the plant milk, sweetener and sprouted flaxseeds and mix well.
Heat a coated frying pan with a bit of oil. Fry 1 tablespoon of the pancake batter in a very hot pan. Fry on both sides until golden brown.
Serve immediately, add sweetener and top with fruit.
