Chop the dried pineapple to make it easier to process. Put the first 5 ingredients in a food processor and mix until a sticky dough is formed (2–4 minutes). Next, form walnut-size balls and serve. You can also coat them in more coconut before serving. Store in an airtight container in the fridge for a week or in the freezer for 1 month.
